PASTRY INSTRUCTOR
ESSENTIAL JOB REQUIREMENTS: Associate’s
degree in Pastry or Culinary Arts required. Possess strong instructional
and leadership skills in the pastry field. Documented minimum of
two (2) years pastry chef experience to include a minimum of three
of the following specialized areas; statuaries, ornaments, decorations
such as sugar, chocolate, pastillage, confections, cream molded
into shapes or fancy pastries. Documented restaurant, hotel, country
club chef, and/or food and beverage experience. Three (3) years
experience providing broad range of food preparation, preferably
in high volume, full-menu operation. PREFERRED:
ACF certification. Ability to prepare and teach all types of cuisine.
Demonstrated use of computer applications for recipe conversions,
menu and inventory management and classroom instruction. Posses
a solid foundation in basic culinary skills. Ability to demonstrate
preparation of desserts, fancy pastries, ice cream, cakes, cake
decorating, fruit fillings, icings, chocolate, creams, custards,
and sauces. Ability to produce quick breads, cookies, cakes, and
various doughs: yeast, laminated, sour, and artesian breads preferred.
Tactile demonstration abilities. Specific knowledge of cost control,
recipe and menu development. Able to plan and organize food orders.
Strong supervisor and human relations skills. Meet college and state
deadlines. Corpus Christi/Nueces County/State of Texas Manager permit
at time of hire. Community college teaching, knowledge of volume
baking, demonstrated current active working relationship with industry
professionals and professional organizations, effective communication
skills. Knowledge of a learning college and/or knowledge of learning
communities.
SALARY: $37,856.00 per 9 months, plus benefits.
EMPLOYMENT STATUS: Tenure Track, Fall 2006.
TRAVEL REQUIRED: some out of town professional
development travel and travel to student site visits.
RESPONSIBILITIES: Strong instructional and leadership
skills in the pastry field. Teach courses in culinary and management.
Conduct site visits. Develop relationships with the business community.
Provide leadership and guidance to advisory committees. Assist in
the development of course curriculum and instructional materials.
Research and identify appropriate textbooks and other instructional
resources. Evaluate student progress and performance and assigns
grades. Hold conferences with students, and advises students. Assist
with marketing the program, recruiting students, and registration.
Keep posted office hours and serve on college and industry committees.
Effectively work as a team member. Other fundamental responsibilities
include professional practice, educational growth, professional
accomplishments, institutional and community service. Develop curriculum
and learning activities. Meet college and regulatory agency deadlines.
Work with students of varied multi-cultural backgrounds. Perform
other related duties as assigned.
